Potato Salad using Mr Huda’s Mint & Tamarind Raitha Paste

Mint Sauce

INGREDIENTS:
200ml Low fat crème fraiche
2-3 tsp Mr Huda’s Mint & Tamarind Raitha Paste
3 tsp sugar
2 tbsp raisins (optional)
350g cooked new potatoes
2 tsp of finely chopped red onion or spring onion.

Mint Sauce

METHOD:  Boil the potatoes in salted water for 10-15 minutes or until soft.

Run under a cold tap to cool or drain and leave to cool.

In a mixing bowl place all the other ingredients and stir until the sugar is dissolved and no longer feels gritty.

Fold in the potatoes and serve as a side dish with a salad or with some warm chicken and curried roast veg.
